Ingredients:

  • 1 cup (250g) creamy peanut butter
  • 1 cup (200g) granulated sugar
  • 1 large egg (50g)

Instructions:

  1. Set your oven to 350°F (175°C). Line a baking sheet with parchment paper or a silicone mat.
  2. In a medium bowl, combine 1 cup creamy peanut butter, 1 cup granulated sugar, and 1 large egg.
  3. Stir the ingredients together vigorously. Stop as soon as the dough looks matte and pulls away from the bowl.
  4. Scoop rounded tablespoons of dough onto your prepared baking sheet. Space them about 2 inches apart.
  5. Press a fork into the top of each ball to flatten it, then rotate 90 degrees and press again.
  6. Bake for 10 minutes until the edges are just barely starting to turn a darker brown.
  7. Leave the cookies on the baking sheet for at least 5 minutes. They are very fragile while hot and need time to set their structure.
  8. Transfer to a wire rack to cool completely. Wait for the bottom to feel firm before moving them.
