Ingredients:
- 1.5 lbs ground chuck (80/20 fat content)
- 1 large egg
- 1.5 tsp fine sea salt
- 1 tsp freshly cracked black pepper
- 0.5 tsp garlic powder
- 0.5 tsp onion powder
Instructions:
- Place the ground chuck into a chilled mixing bowl, gently breaking the meat apart to allow for even seasoning distribution.
- Whisk the large egg in a small separate bowl, then drizzle it over the beef. Evenly sprinkle the fine sea salt, black pepper, garlic powder, and onion powder across the surface.
- Gently mix the ingredients until just combined. Divide the mixture into four equal portions, approximately 6oz (170g) each.
- Lightly shape each portion into a disc about 1 inch thick, taking care not to overwork or squeeze the meat fibers.
- Using your thumb, press a shallow 1/2-inch deep indentation (dimple) into the center of each raw patty to prevent bulging during cooking.
- Heat a cast iron skillet or heavy-duty grill to medium-high heat until nearly smoking before adding the patties for searing.
