Ingredients:

  • 16 oz frozen sweet peas, thawed
  • 4 large hard-boiled eggs, diced
  • 6 slices cooked bacon, crumbled
  • 1/2 cup sharp cheddar cheese, cubed small
  • 1/4 cup red onion, finely diced
  • 1/2 cup mayonnaise
  • 1 tbsp apple cider vinegar
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 tsp sugar

Instructions:

  1. Thaw frozen peas by placing them in a colander under cool running water for 2 minutes, then pat them dry with a paper towel.
  2. In a large mixing bowl, combine the dried peas, diced eggs, crumbled bacon, cubed cheddar, and red onion. Stir gently with a rubber spatula until evenly distributed.
  3. In a separate small bowl, whisk together the mayonnaise, apple cider vinegar, salt, and pepper until the mixture is smooth and glossy.
  4. Pour the dressing over the salad base and fold gently until every pea is coated.
