Ingredients:
- 16 oz frozen sweet peas, thawed
- 4 large hard-boiled eggs, diced
- 6 slices cooked bacon, crumbled
- 1/2 cup sharp cheddar cheese, cubed small
- 1/4 cup red onion, finely diced
- 1/2 cup mayonnaise
- 1 tbsp apple cider vinegar
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/4 tsp sugar
Instructions:
- Thaw frozen peas by placing them in a colander under cool running water for 2 minutes, then pat them dry with a paper towel.
- In a large mixing bowl, combine the dried peas, diced eggs, crumbled bacon, cubed cheddar, and red onion. Stir gently with a rubber spatula until evenly distributed.
- In a separate small bowl, whisk together the mayonnaise, apple cider vinegar, salt, and pepper until the mixture is smooth and glossy.
- Pour the dressing over the salad base and fold gently until every pea is coated.
