Ingredients:
- 16 oz frozen sweet peas, thawed and drained
- 8 oz sharp cheddar cheese, cubed into 1/4 inch pieces
- 6 slices thick-cut bacon, cooked crisp and crumbled
- 1/2 cup red onion, finely diced
- 2 large hard-boiled eggs, chopped
- 1/2 cup mayonnaise
- 1/4 cup plain Greek yogurt
- 1 tbsp apple cider vinegar
- 1 tbsp granulated sugar
- 1/2 tsp salt
- 1/4 tsp black pepper
Instructions:
- Thaw frozen peas under cool running water and place them in a fine-mesh strainer. Press firmly with a spoon to remove all excess moisture. Dice cheddar cheese and red onion into uniform pieces.
- In a small bowl, whisk together mayonnaise, Greek yogurt, apple cider vinegar, sugar, salt, and pepper until the mixture is velvety and the sugar has completely dissolved.
- Combine the drained peas, cheddar cubes, diced onion, and chopped eggs in a large mixing bowl. Pour the dressing over the top and fold gently with a spatula until every pea is coated.
- Gently stir in the crumbled bacon last to avoid breaking the pieces.
- Cover the bowl and refrigerate for at least 1 hour to allow flavors to fuse.
