Ingredients:

  • 16 oz frozen sweet peas, thawed and drained
  • 8 oz sharp cheddar cheese, cubed into 1/4 inch pieces
  • 6 slices thick-cut bacon, cooked crisp and crumbled
  • 1/2 cup red onion, finely diced
  • 2 large hard-boiled eggs, chopped
  • 1/2 cup mayonnaise
  • 1/4 cup plain Greek yogurt
  • 1 tbsp apple cider vinegar
  • 1 tbsp granulated sugar
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Instructions:

  1. Thaw frozen peas under cool running water and place them in a fine-mesh strainer. Press firmly with a spoon to remove all excess moisture. Dice cheddar cheese and red onion into uniform pieces.
  2. In a small bowl, whisk together mayonnaise, Greek yogurt, apple cider vinegar, sugar, salt, and pepper until the mixture is velvety and the sugar has completely dissolved.
  3. Combine the drained peas, cheddar cubes, diced onion, and chopped eggs in a large mixing bowl. Pour the dressing over the top and fold gently with a spatula until every pea is coated.
  4. Gently stir in the crumbled bacon last to avoid breaking the pieces.
  5. Cover the bowl and refrigerate for at least 1 hour to allow flavors to fuse.
