Ingredients:

  • 1.5 cups frozen mango chunks
  • 0.5 cup frozen pineapple tidbits
  • 0.5 medium banana, sliced
  • 1 cup unsweetened coconut water
  • 0.5 cup plain Greek yogurt
  • 1 tbsp fresh lime juice
  • 2 tbsp black chia seeds
  • 1 tsp honey

Instructions:

  1. Pour the coconut water and lime juice into the blender first. Note: This prevents the frozen fruit from getting stuck at the bottom and burning out the motor.
  2. Add the creamy base. Spoon the Greek yogurt and honey into the liquid.
  3. Add the frozen mango, frozen pineapple, and the half banana. Blend on low 30 seconds until the large chunks are broken down.
  4. Measure out the chia seeds and add them to the mixture.
  5. Increase to high speed and blend for 60 seconds until the mixture is velvety and vibrant.
  6. Stop the blender and stir with a spatula. Look for a thick, spoonable texture that holds its shape for a second before settling.
  7. Let the blender sit for 2 minutes. Note: This allows the chia seeds to begin their hydration process, resulting in a thicker drink.
  8. Give it one last 5 second pulse to re incorporate everything before pouring.
  9. Pour into a tall glass. You should see tiny dark specks of chia distributed evenly throughout the yellow mango base.
