Ingredients:
- 1.25 cups (150g) all-purpose flour
- 0.5 cup (115g) unsalted butter, chilled and cubed
- 1 tbsp (12g) granulated sugar
- 0.5 tsp (3g) salt
- 4 tbsp (60ml) ice-cold water
- 2.5 lbs (1.1kg) baking apples
- 2 tbsp (30g) unsalted butter, melted
- 1 tbsp (15ml) lemon juice
- 2 tbsp (25g) maple syrup
- 1 tsp (2g) ground cinnamon
- 0.25 tsp (1g) salt
- 2 tbsp (30g) apricot preserves
- 1 tbsp (15ml) water
Instructions:
- In a large bowl, whisk together the flour, sugar, and salt.
- Add chilled, cubed butter. Use a pastry cutter to work the butter into the flour until the mixture resembles coarse crumbs with some pea-sized pieces remaining.
- Add ice-cold water one tablespoon at a time, stirring with a fork until the dough just begins to clump together.
- Shape the dough into a flat disc, wrap in plastic, and refrigerate for at least 1 hour.
- Peel, core, and thinly slice the apples into uniform rounds (about 1/8 inch thick).
- In a bowl, combine apple slices with lemon juice, melted butter, maple syrup, cinnamon, and salt. Toss gently to coat.
- Let the apples sit for 10 minutes to allow the flavors to penetrate.
- Roll out dough, fit into a 9-inch tart pan, fill with apples, and bake for 45 minutes.
- Warm apricot preserves with water and glaze the tart after baking.
