Ingredients:

  • 1/4 cup granulated sugar
  • 2 tablespoons ground cinnamon
  • 1 cup unsalted butter, softened
  • 1.5 cups granulated sugar
  • 2 large eggs, room temperature
  • 1 tablespoon pure vanilla extract
  • 2.75 cups all-purpose flour
  • 2 teaspoons cream of tartar
  • 1 teaspoon baking soda
  • 0.5 teaspoon fine sea salt

Instructions:

  1. Preheat your oven to 400°F (200°C). Cream the softened butter and 1.5 cups of granulated sugar on medium-high speed for 3 full minutes until the mixture is pale and aerated like whipped frosting.
  2. Beat in the eggs one at a time, followed by the vanilla extract, until the mixture is voluminous and well-emulsified.
  3. In a separate bowl, whisk together the flour, cream of tartar, baking soda, and salt. Turn the mixer to the lowest setting and gradually add the dry ingredients to the wet ingredients, mixing only until no white streaks remain.
  4. In a small bowl, combine the 1/4 cup coating sugar and 2 tablespoons of cinnamon. Scoop 1.5 tablespoons of dough and roll into a smooth ball, then roll thoroughly in the cinnamon-sugar mixture.
  5. Place cookies on parchment-lined baking sheets and bake for 10 minutes or until edges are set but centers remain soft. Cool on a wire rack.
