Ingredients:

  • 16 oz frozen English peas, thawed and drained
  • 1/2 cup celery, finely diced
  • 1/4 cup red onion, minced
  • 1/2 cup sharp cheddar cheese, cubed small
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup light mayonnaise
  • 1/4 cup plain Greek yogurt
  • 1 tbsp fresh lemon juice
  • 1 tsp granulated sugar
  • 1/2 tsp salt
  • 1/4 tsp cracked black pepper

Instructions:

  1. Place the thawed English peas in a fine-mesh strainer and pat them dry with a paper towel until cold and firm.
  2. Finely dice the celery and red onion.
  3. Combine the peas, celery, onion, cheese, and parsley in a large mixing bowl.
  4. In a separate small bowl, whisk together the light mayonnaise, Greek yogurt, lemon juice, sugar, salt, and pepper until smooth and velvety.
  5. Pour the dressing over the pea mixture and gently fold with a rubber spatula until every pea is glazed.
  6. Cover and refrigerate for at least 30 minutes before serving to allow the flavors to meld.
