Ingredients:
- 16 oz frozen English peas, thawed and drained
- 1/2 cup celery, finely diced
- 1/4 cup red onion, minced
- 1/2 cup sharp cheddar cheese, cubed small
- 1/4 cup fresh parsley, chopped
- 1/4 cup light mayonnaise
- 1/4 cup plain Greek yogurt
- 1 tbsp fresh lemon juice
- 1 tsp granulated sugar
- 1/2 tsp salt
- 1/4 tsp cracked black pepper
Instructions:
- Place the thawed English peas in a fine-mesh strainer and pat them dry with a paper towel until cold and firm.
- Finely dice the celery and red onion.
- Combine the peas, celery, onion, cheese, and parsley in a large mixing bowl.
- In a separate small bowl, whisk together the light mayonnaise, Greek yogurt, lemon juice, sugar, salt, and pepper until smooth and velvety.
- Pour the dressing over the pea mixture and gently fold with a rubber spatula until every pea is glazed.
- Cover and refrigerate for at least 30 minutes before serving to allow the flavors to meld.
