Ingredients:
- 1/2 cup (125g) Plain Greek Yogurt
- 1/4 cup (60g) Mayonnaise
- 1/4 cup (60ml) Extra Virgin Olive Oil
- 2 cups (approx. 80g) Fresh Cilantro, leaves and tender stems
- 2 cloves Garlic, peeled and smashed
- 1 small Jalapeño, deseeded and roughly chopped
- 1/4 cup (60ml) Fresh Lime Juice
- 1 tsp Lime Zest
- 1 tbsp Honey
- 1/2 tsp Ground Cumin
- 1/2 tsp Sea Salt
- 1/4 tsp Cracked Black Pepper
Instructions:
- Wash the cilantro thoroughly to remove grit and pat dry completely to ensure the dressing doesn't become watery.
- Roughly chop the cilantro, including the tender upper stems which contain essential aromatic oils.
- Place the Greek yogurt, mayonnaise, olive oil, lime juice, honey, garlic, and spices into a high-speed blender or food processor.
- Add the cilantro and chopped jalapeño on top of the liquid ingredients.
- Pulse and then blend on high speed until the dressing is completely smooth and vibrant green. Transfer to an airtight glass jar and refrigerate before serving.
