Ingredients:
- 2 large English cucumbers, thinly sliced (approx. 1 lb / 450g)
- 1/2 cup red onion, sliced paper-thin (75g)
- 1 tsp kosher salt (for sweating the cucumbers)
- 1/2 cup sour cream (120g)
- 1/4 cup Greek yogurt, plain, full fat (60g)
- 2 tbsp apple cider vinegar (30ml)
- 1 tbsp granulated sugar (15g)
- 1 tsp salt (5g)
- 1/2 tsp cracked black pepper (2.5g)
- 2 tbsp fresh dill, finely chopped (8g)
Instructions:
- Place the sliced cucumbers in a colander, sprinkle with 1 tsp kosher salt, toss to coat, and let sit for 30 minutes. Gently pat the cucumbers dry with a paper towel.
- In a large mixing bowl, combine sour cream, Greek yogurt, apple cider vinegar, sugar, salt, and black pepper. Whisk until smooth, then stir in the fresh dill.
- Add the dried cucumbers and sliced red onions to the dressing. Gently fold with a rubber spatula until evenly coated. Serve immediately or refrigerate for 15 minutes.
