Ingredients:

  • 2 large English cucumbers, thinly sliced (approx. 1 lb / 450g)
  • 1/2 cup red onion, sliced paper-thin (75g)
  • 1 tsp kosher salt (for sweating the cucumbers)
  • 1/2 cup sour cream (120g)
  • 1/4 cup Greek yogurt, plain, full fat (60g)
  • 2 tbsp apple cider vinegar (30ml)
  • 1 tbsp granulated sugar (15g)
  • 1 tsp salt (5g)
  • 1/2 tsp cracked black pepper (2.5g)
  • 2 tbsp fresh dill, finely chopped (8g)

Instructions:

  1. Place the sliced cucumbers in a colander, sprinkle with 1 tsp kosher salt, toss to coat, and let sit for 30 minutes. Gently pat the cucumbers dry with a paper towel.
  2. In a large mixing bowl, combine sour cream, Greek yogurt, apple cider vinegar, sugar, salt, and black pepper. Whisk until smooth, then stir in the fresh dill.
  3. Add the dried cucumbers and sliced red onions to the dressing. Gently fold with a rubber spatula until evenly coated. Serve immediately or refrigerate for 15 minutes.
