Ingredients:

  • 1 lb English cucumber, thinly sliced
  • 10 oz cherry tomatoes, halved
  • 1/2 cup red onion, finely diced
  • 1/4 cup fresh dill, chopped
  • 1/2 cup sour cream
  • 2 tbsp lemon juice
  • 1 tbsp apple cider vinegar
  • 1 clove garlic, minced
  • 1/2 tsp garlic powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Instructions:

  1. Slice the cucumbers into thin rounds. Place them in a colander, sprinkle with a pinch of salt, and let them sit for 10 minutes to release excess water. Pat them dry with a paper towel.
  2. Halve the cherry tomatoes and finely dice the red onion.
  3. In a small bowl, combine the sour cream, lemon juice, apple cider vinegar, minced garlic, garlic powder, salt, and pepper. Whisk vigorously until the mixture is smooth and velvety.
  4. Place the dried cucumbers, tomatoes, and red onion into a large mixing bowl. Pour the dressing over the vegetables.
  5. Using a rubber spatula or large spoon, gently fold the salad until every piece is evenly coated. Stir in the fresh dill last.
