Ingredients:
- 1 lb English cucumber, thinly sliced
- 10 oz cherry tomatoes, halved
- 1/2 cup red onion, finely diced
- 1/4 cup fresh dill, chopped
- 1/2 cup sour cream
- 2 tbsp lemon juice
- 1 tbsp apple cider vinegar
- 1 clove garlic, minced
- 1/2 tsp garlic powder
- 1/2 tsp salt
- 1/4 tsp black pepper
Instructions:
- Slice the cucumbers into thin rounds. Place them in a colander, sprinkle with a pinch of salt, and let them sit for 10 minutes to release excess water. Pat them dry with a paper towel.
- Halve the cherry tomatoes and finely dice the red onion.
- In a small bowl, combine the sour cream, lemon juice, apple cider vinegar, minced garlic, garlic powder, salt, and pepper. Whisk vigorously until the mixture is smooth and velvety.
- Place the dried cucumbers, tomatoes, and red onion into a large mixing bowl. Pour the dressing over the vegetables.
- Using a rubber spatula or large spoon, gently fold the salad until every piece is evenly coated. Stir in the fresh dill last.
