Ingredients:

  • 16 oz frozen peas, partially thawed
  • 1 cup sharp cheddar cheese, diced small
  • 1/2 cup red onion, finely minced
  • 1/2 cup cooked bacon, crumbled
  • 1/2 cup mayonnaise
  • 1/4 cup sour cream
  • 1 tbsp apple cider vinegar
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 tsp granulated sugar

Instructions:

  1. Place the frozen peas in a colander for about 10–15 minutes until they are slightly softened but still icy in the center.
  2. In a medium bowl, combine the mayonnaise, sour cream, apple cider vinegar, salt, pepper, and sugar. Whisk vigorously until the mixture is velvety and completely smooth.
  3. In a large mixing bowl, combine the partially thawed peas, diced cheddar, red onion, and crumbled bacon.
  4. Pour the dressing over the pea mixture and gently fold with a silicone spatula until the ingredients are evenly coated, being careful not to crush the peas.
