Ingredients:
- 1 lb (450g) English cucumber, thinly sliced
- 1/2 cup (75g) white onion, thinly sliced into half-moons
- 1 tsp (6g) kosher salt
- 1/2 cup (120ml) white distilled vinegar
- 1/4 cup (50g) granulated sugar
- 1/2 tsp (3g) salt
- 1/4 tsp (1g) black pepper
Instructions:
- Slice the cucumbers and onions thinly. Place the cucumbers in a colander and sprinkle with 1 tsp (6g) of salt. Let them sit for about 20 minutes until moisture glistening on the surface appears. Rinse them quickly under cold water and pat dry to remove excess salt.
- In a mixing bowl, combine the white vinegar, sugar, salt, and pepper. Whisk vigorously until the sugar crystals have completely disappeared and the liquid is a smooth, translucent syrup.
- Add the salted cucumbers and sliced onions to the bowl. Toss gently to ensure every slice is coated in the dressing.
- Cover and refrigerate for at least 30 minutes to allow the flavors to meld and the vegetables to chill.
