Ingredients:

  • 20 oz frozen sweet peas
  • 1 cup diced celery
  • 1/2 cup finely diced red onion
  • 1 cup dairy-free cheddar shreds
  • 1/4 cup fresh parsley, chopped
  • 1/2 cup vegan mayonnaise
  • 2 tbsp apple cider vinegar
  • 1 tbsp maple syrup
  • 1/2 tsp garlic powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Instructions:

  1. Bring a pot of salted water to a rolling boil. Add frozen peas and cook for 2 minutes. Immediately drain in a colander and plunge into an ice bath until cold.
  2. In a small bowl, whisk together the vegan mayonnaise, apple cider vinegar, maple syrup, garlic powder, salt, and black pepper until the mixture is smooth and glossy.
  3. In a large mixing bowl, combine the chilled peas, diced celery, and red onion.
  4. Pour the dressing over the vegetables and fold gently with a spatula. Fold in the dairy-free cheddar and chopped parsley.
  5. Cover the bowl and refrigerate for at least 2 hours to allow flavors to marry and the dressing to set.
