Ingredients:

  • 16 oz frozen English peas
  • 6 slices bacon, cooked and crumbled
  • 1/2 cup red onion, finely diced
  • 1/2 cup sharp cheddar cheese, cubed small
  • 3 large hard-boiled eggs, chopped
  • 1/2 cup mayonnaise
  • 1/4 cup sour cream
  • 1 tbsp apple cider vinegar
  • 2 tbsp granulated sugar
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Instructions:

  1. Place the frozen English peas in a colander and run them under cold water for 30 seconds to remove any ice crystals. Drain thoroughly.
  2. In a medium bowl, combine the mayonnaise, sour cream, apple cider vinegar, sugar, salt, and pepper. Whisk until the sugar has dissolved and the mixture is a smooth, velvety consistency.
  3. Transfer the drained peas to the large mixing bowl. Pour the dressing over the peas and toss gently to coat.
  4. Carefully fold in the crumbled bacon, diced red onion, cubed cheddar, and chopped eggs. Mix just until incorporated to keep the ingredients intact.
