Ingredients:

  • 2 cups (250g) All-Purpose Flour
  • 3 tbsp (38g) Granulated Sugar
  • 2 tsp Baking Powder
  • 1 tsp Baking Soda
  • 1/2 tsp Salt
  • 2 cups (480ml) Real Buttermilk
  • 2 Large Eggs
  • 4 tbsp (56g) Unsalted Butter, melted and cooled
  • 1 tsp Pure Vanilla Extract

Instructions:

  1. Whisk the flour, sugar, baking powder, baking soda, and salt in a large mixing bowl until aerated and well-combined.
  2. In a separate medium pitcher or bowl, whisk together the buttermilk, eggs, melted butter, and vanilla extract.
  3. Pour the wet mixture into the dry ingredients. Use a spatula to fold the mixture until just combined. The batter should remain lumpy; do not over-mix.
  4. Allow the batter to rest for 5 minutes at room temperature until small bubbles begin to form on the surface.
  5. Heat a non-stick griddle or cast iron skillet over medium low heat. Pour 1/4 cup batter onto the surface and cook until bubbles pop and edges look set (2-3 minutes), then flip and cook until golden brown (1-2 minutes).
  6. Place finished cakes on a wire rack in a 200°F oven.
