Ingredients:

  • 16 oz frozen sweet peas, thawed and drained
  • 1/2 cup red onion, finely diced
  • 1/3 cup sharp cheddar cheese, cubed small
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup plain Greek yogurt
  • 1/4 cup mayonnaise
  • 1 tbsp lemon juice, freshly squeezed
  • 1 tsp apple cider vinegar
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 tsp honey

Instructions:

  1. Place the frozen peas in a colander and rinse under cold water until they are fully thawed.
  2. Spread the thawed peas on paper towels and pat them dry until no visible moisture remains. Note: This prevents the dressing from becoming watery.
  3. Grab a small bowl and combine the Greek yogurt, mayonnaise, lemon juice, apple cider vinegar, salt, pepper, and honey.
  4. Whisk the dressing vigorously until the mixture is smooth and glossy.
  5. Toss the dried peas, diced red onion, cheddar cheese, and chopped parsley into your large mixing bowl.
  6. Pour the prepared dressing over the bowl of ingredients.
  7. Use a rubber spatula to gently fold the mixture together until every pea is evenly coated.
  8. Give it a final stir to ensure the cheese and onion are distributed evenly.
