Ingredients:

  • 16 oz refrigerated flaky biscuit dough
  • 2 tbsp unsalted butter, melted
  • 1 tsp garlic powder
  • 1 tsp dried oregano
  • 1/2 cup pizza sauce
  • 1.5 cups low moisture mozzarella, shredded
  • 1/2 cup mini pepperoni slices
  • 1/4 cup grated Parmesan cheese

Instructions:

  1. Preheat oven to 375°F (190°C). Generously grease a 12-cup muffin tin with non-stick spray or olive oil.
  2. In a small bowl, combine melted butter, garlic powder, and dried oregano.
  3. Open the 16 oz biscuit dough and separate the individual biscuits.
  4. Coat the Base. Dip each biscuit into the seasoned butter or brush it on both sides, then press it firmly into the bottom and up the sides of each muffin cup.
  5. Add the Sauce. Place a small spoonful (about 2 tsp) of pizza sauce into the center of each dough cup.
  6. Layer the Cheese. Divide the 1.5 cups of mozzarella evenly among the 12 muffins. Pack it down slightly.
  7. Top with Pepperoni. Press several mini pepperoni slices into the cheese.
  8. The Parmesan Finish. Sprinkle the grated Parmesan over the top of each muffin for that extra savory crust.
  9. Bake Until Golden. Slide the tray into the oven for 15 minutes until the edges are deep brown and the cheese is bubbly.
  10. Rest and Release. Let the muffins sit in the tin for 5 minutes. This allows the structure to set so they don't fall apart when you lift them.
