Ingredients:

  • 2 large eggs
  • 150g granulated sugar
  • 60g plain Greek yogurt
  • 85g unsalted butter, melted and cooled
  • 190g all-purpose flour
  • 1 tsp baking powder
  • 1 tsp ground cardamom
  • 0.5 tsp fine sea salt
  • 3 medium Granny Smith apples, cored and thinly sliced
  • 1 tsp ground cinnamon
  • 1 tbsp turbinado sugar
  • 0.25 cup salted caramel sauce

Instructions:

  1. Preheat oven to 175°C and grease your springform pan thoroughly with butter.
  2. Beat the 2 eggs and 150g sugar together until the mixture is pale and frothy. This takes about 2 to 3 minutes by hand.
  3. Stir in the 60g Greek yogurt and 85g melted butter.
  4. Gently fold in the 190g flour, 1 tsp baking powder, 1 tsp cardamom, and 0.5 tsp salt until no white streaks remain.
  5. Pour the mixture into your prepared pan and smooth the top with a spatula. It will be thick, which is exactly what we want.
  6. Press the apple slices into the batter in a circular pattern, overlapping them slightly.
  7. Sprinkle the 1 tsp cinnamon and 1 tbsp turbinado sugar evenly over the apples.
  8. Place in the oven for 45 minutes until the top is golden and a skewer comes out clean.
  9. Let it cool for 10 minutes, then drizzle with 0.25 cup salted caramel sauce. Watch it sizzle slightly as it hits the warm fruit.
  10. Release the sides of the pan and let the cake cool further before slicing.
