Ingredients:
- 2 large eggs
- 150g granulated sugar
- 60g plain Greek yogurt
- 85g unsalted butter, melted and cooled
- 190g all-purpose flour
- 1 tsp baking powder
- 1 tsp ground cardamom
- 0.5 tsp fine sea salt
- 3 medium Granny Smith apples, cored and thinly sliced
- 1 tsp ground cinnamon
- 1 tbsp turbinado sugar
- 0.25 cup salted caramel sauce
Instructions:
- Preheat oven to 175°C and grease your springform pan thoroughly with butter.
- Beat the 2 eggs and 150g sugar together until the mixture is pale and frothy. This takes about 2 to 3 minutes by hand.
- Stir in the 60g Greek yogurt and 85g melted butter.
- Gently fold in the 190g flour, 1 tsp baking powder, 1 tsp cardamom, and 0.5 tsp salt until no white streaks remain.
- Pour the mixture into your prepared pan and smooth the top with a spatula. It will be thick, which is exactly what we want.
- Press the apple slices into the batter in a circular pattern, overlapping them slightly.
- Sprinkle the 1 tsp cinnamon and 1 tbsp turbinado sugar evenly over the apples.
- Place in the oven for 45 minutes until the top is golden and a skewer comes out clean.
- Let it cool for 10 minutes, then drizzle with 0.25 cup salted caramel sauce. Watch it sizzle slightly as it hits the warm fruit.
- Release the sides of the pan and let the cake cool further before slicing.
