Ingredients:

  • 3 large overripe bananas (approx. 375g)
  • 1/2 cup plain full-fat Greek yogurt (142g)
  • 1 large egg (50g)
  • 1/3 cup melted coconut oil (76g)
  • 1 tbsp pure vanilla extract (13g)
  • 1/2 cup coconut sugar (100g)
  • 1.5 cups all-purpose flour (187g)
  • 1 tsp baking soda (5g)
  • 1/2 tsp sea salt (3g)
  • 1 tsp ground cinnamon (2.6g)
  • 1 cup bittersweet dark chocolate chips (170g)

Instructions:

  1. Preheat your oven to 350°F (180°C). Grease your loaf pan with a bit of oil or line it with parchment paper for an easy lift out later.
  2. In a large mixing bowl, mash the 3 large overripe bananas until mostly smooth with minimal lumps.
  3. Whisk in the 1/3 cup melted coconut oil, 1/2 cup coconut sugar, 1 large egg, 1/2 cup Greek yogurt, and 1 tbsp vanilla extract into the banana mixture until fully emulsified.
  4. In a medium bowl, whisk together the 1.5 cups flour, 1 tsp baking soda, 1/2 tsp sea salt, and 1 tsp cinnamon.
  5. Gently fold the dry ingredients into the wet ingredients using a silicone spatula until just combined. Do not overmix.
  6. Fold in the dark chocolate chips, reserving 1/4 cup to sprinkle on the top.
  7. Pour the batter into the prepared loaf pan and sprinkle the remaining 1/4 cup of chips on top. Bake for 60 minutes, or until a toothpick inserted into the center comes out clean.
  8. Transfer to a wire cooling rack and allow the bread to cool completely before slicing.
