Ingredients:
- 1 lb fresh shelled garden peas
- 6 oz cooked bacon, crumbled
- 1 cup sharp cheddar cheese, shredded
- 1/4 cup red onion, finely diced
- salt to taste
- black pepper to taste
- 1/2 cup mayonnaise
- 1/4 cup sour cream
- 1 tbsp apple cider vinegar
- 1 tsp granulated sugar
- 1/2 tsp garlic powder
Instructions:
- Bring a large pot of salted water to a rolling boil. Add the peas and cook for 2–3 minutes until vibrant green. Immediately drain and plunge into an ice bath to stop the cooking process, then pat dry with a paper towel.
- In a small bowl, whisk together the mayonnaise, sour cream, apple cider vinegar, sugar, and garlic powder until smooth.
- In a large mixing bowl, combine the chilled peas, crumbled bacon, shredded cheddar, and diced red onion.
- Pour the dressing over the pea mixture and fold gently with a spatula until evenly coated.
- Cover and refrigerate for at least 1 hour to allow flavors to marry before serving.
