Ingredients:

  • 1 lb fresh shelled garden peas
  • 6 oz cooked bacon, crumbled
  • 1 cup sharp cheddar cheese, shredded
  • 1/4 cup red onion, finely diced
  • salt to taste
  • black pepper to taste
  • 1/2 cup mayonnaise
  • 1/4 cup sour cream
  • 1 tbsp apple cider vinegar
  • 1 tsp granulated sugar
  • 1/2 tsp garlic powder

Instructions:

  1. Bring a large pot of salted water to a rolling boil. Add the peas and cook for 2–3 minutes until vibrant green. Immediately drain and plunge into an ice bath to stop the cooking process, then pat dry with a paper towel.
  2. In a small bowl, whisk together the mayonnaise, sour cream, apple cider vinegar, sugar, and garlic powder until smooth.
  3. In a large mixing bowl, combine the chilled peas, crumbled bacon, shredded cheddar, and diced red onion.
  4. Pour the dressing over the pea mixture and fold gently with a spatula until evenly coated.
  5. Cover and refrigerate for at least 1 hour to allow flavors to marry before serving.
