Ingredients:
- 1 lb sirloin steak, cut into 1-inch cubes
- 1 tbsp vegetable oil
- 1 tsp kosher salt
- 1/2 tsp coarse black pepper
- 1/2 tsp garlic powder
- 4 tbsp unsalted butter
- 4 cloves garlic, minced
- 1 tbsp fresh parsley, chopped
Instructions:
- Pat the cubed sirloin dry with paper towels. In a medium bowl, toss the steak with the vegetable oil, salt, pepper, and garlic powder until evenly coated.
- Place a cast iron skillet over high heat until a drop of water evaporates instantly. Add steak bites in a single layer; sear for 2 minutes without moving them to develop a crust, then flip and sear for another 2 minutes.
- Reduce heat to medium. Add the unsalted butter and minced garlic to the center of the pan. As the butter foams, toss the steak bites in the melting butter for 60–90 seconds.
- Remove from heat immediately and garnish with chopped fresh parsley.
