Ingredients:

  • 4 flounder fillets (approx. 1.5 lbs)
  • 1 tbsp fresh lemon juice
  • 1/2 tsp sea salt
  • 1/4 tsp cracked black pepper
  • 1/2 cup grated Parmesan cheese
  • 3 cloves garlic, minced
  • 1 tbsp extra virgin olive oil
  • 1 tsp smoked paprika
  • 1/4 tsp dried oregano

Instructions:

  1. Use paper towels to pat each flounder fillet completely dry to ensure the crust adheres and crisps.
  2. Lightly brush the fillets with fresh lemon juice and season evenly with sea salt and cracked black pepper.
  3. Preheat the oven to 400°F (200°C).
  4. In a small mixing bowl, combine the grated parmesan cheese, minced garlic, smoked paprika, and dried oregano.
  5. Stir in the extra virgin olive oil until the mixture reaches a wet sand consistency.
  6. Gently press the parmesan mixture onto the top of each fillet, creating a thick, even layer.
  7. Place the fillets on a parchment-lined baking sheet.
  8. Bake for 12–15 minutes until the crust is mahogany-colored and the fish flakes easily with a fork.
