Ingredients:
- 4 flounder fillets (approx. 1.5 lbs)
- 1 tbsp fresh lemon juice
- 1/2 tsp sea salt
- 1/4 tsp cracked black pepper
- 1/2 cup grated Parmesan cheese
- 3 cloves garlic, minced
- 1 tbsp extra virgin olive oil
- 1 tsp smoked paprika
- 1/4 tsp dried oregano
Instructions:
- Use paper towels to pat each flounder fillet completely dry to ensure the crust adheres and crisps.
- Lightly brush the fillets with fresh lemon juice and season evenly with sea salt and cracked black pepper.
- Preheat the oven to 400°F (200°C).
- In a small mixing bowl, combine the grated parmesan cheese, minced garlic, smoked paprika, and dried oregano.
- Stir in the extra virgin olive oil until the mixture reaches a wet sand consistency.
- Gently press the parmesan mixture onto the top of each fillet, creating a thick, even layer.
- Place the fillets on a parchment-lined baking sheet.
- Bake for 12–15 minutes until the crust is mahogany-colored and the fish flakes easily with a fork.
