Ingredients:

  • 6 cups (900g) sliced fresh peaches, peeled
  • 1/2 cup (100g) granulated sugar
  • 1 tbsp (15ml) lemon juice
  • 1 tsp (2g) ground cinnamon
  • 1/4 tsp (1.5g) salt
  • 1 tbsp (16g) cornstarch
  • 1/2 cup (115g) unsalted butter, melted
  • 1 cup (125g) all-purpose flour
  • 1 cup (200g) granulated sugar
  • 1 tbsp (12g) baking powder
  • 1/2 tsp (3g) salt
  • 1 cup (240ml) whole milk

Instructions:

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, toss the sliced peaches with 100g granulated sugar, lemon juice, cinnamon, 1.5g salt, and cornstarch.
  3. Allow the peach mixture to sit for 10 minutes to release juices, then pour into a 9x13 inch baking dish and spread evenly.
  4. In a medium bowl, whisk together flour, 200g granulated sugar, baking powder, and 3g salt.
  5. Stir in the whole milk until the batter is smooth and velvety.
  6. Pour the melted butter into the bottom of the baking dish, then pour the batter directly over the peaches without stirring.
  7. Bake on the center rack for 40–45 minutes until the topping is deep mahogany gold and fruit juices are bubbling.
