Ingredients:
- 3 lbs fresh peaches, peeled and sliced
- 1/2 cup granulated sugar
- 2 tbsp cornstarch
- 1 tbsp lemon juice
- 1 tbsp fresh lemon zest
- 1/2 tsp ground cinnamon
- 1/4 tsp salt
- 1 cup all-purpose flour
- 1 cup granulated sugar
- 1 tbsp baking powder
- 1/2 tsp salt
- 1 cup whole milk
- 1/2 cup unsalted butter, melted
Instructions:
- In a large bowl, combine sliced peaches, 1/2 cup sugar, cornstarch, lemon juice, lemon zest, cinnamon, and 1/4 tsp salt.
- Allow the peach mixture to macerate for 5–10 minutes until juices are released and cornstarch is dissolved into a smooth syrup.
- Pour the fruit mixture into a 9x13-inch baking dish, spreading it evenly to the edges.
- In the same mixing bowl, whisk together flour, 1 cup sugar, baking powder, and 1/2 tsp salt.
- Stir in the milk until just combined, then fold in the melted butter until the batter is smooth and glossy.
- Spoon the batter over the peaches in the baking dish without stirring the two layers together.
- Bake in a preheated oven at 350°F (175°C) for 40–45 minutes until the topping is mahogany-colored and fruit juices are bubbling.
