Ingredients:

  • 3 lbs fresh peaches, peeled and sliced
  • 1/2 cup granulated sugar
  • 2 tbsp cornstarch
  • 1 tbsp lemon juice
  • 1 tbsp fresh lemon zest
  • 1/2 tsp ground cinnamon
  • 1/4 tsp salt
  • 1 cup all-purpose flour
  • 1 cup granulated sugar
  • 1 tbsp baking powder
  • 1/2 tsp salt
  • 1 cup whole milk
  • 1/2 cup unsalted butter, melted

Instructions:

  1. In a large bowl, combine sliced peaches, 1/2 cup sugar, cornstarch, lemon juice, lemon zest, cinnamon, and 1/4 tsp salt.
  2. Allow the peach mixture to macerate for 5–10 minutes until juices are released and cornstarch is dissolved into a smooth syrup.
  3. Pour the fruit mixture into a 9x13-inch baking dish, spreading it evenly to the edges.
  4. In the same mixing bowl, whisk together flour, 1 cup sugar, baking powder, and 1/2 tsp salt.
  5. Stir in the milk until just combined, then fold in the melted butter until the batter is smooth and glossy.
  6. Spoon the batter over the peaches in the baking dish without stirring the two layers together.
  7. Bake in a preheated oven at 350°F (175°C) for 40–45 minutes until the topping is mahogany-colored and fruit juices are bubbling.
