Ingredients:
- 16 oz frozen sweet peas, thawed
- 1/2 cup red onion, finely diced
- 1/2 cup sharp cheddar cheese, cubed small
- 1/4 cup fresh parsley, chopped
- 4 slices cooked crispy bacon, crumbled
- 1/4 cup Greek yogurt, plain
- 2 tbsp light mayonnaise
- 1 tbsp apple cider vinegar
- 1 tsp honey
- 1/2 tsp salt
- 1/4 tsp black pepper
Instructions:
- Place the thawed peas in a colander, rinse under cold water for 30 seconds, and pat dry with a paper towel.
- In a small bowl, whisk together the Greek yogurt, light mayonnaise, apple cider vinegar, honey, salt, and pepper until smooth.
- Combine the dried peas, diced red onion, cheddar cubes, and parsley in a large mixing bowl.
- Pour the dressing over the mixture and gently fold with a spatula until every pea is evenly coated.
- Fold in the crumbled bacon last to maintain its crunch.
