Ingredients:

  • 16 oz frozen sweet peas, thawed
  • 1/2 cup red onion, finely diced
  • 1/2 cup sharp cheddar cheese, cubed small
  • 1/4 cup fresh parsley, chopped
  • 4 slices cooked crispy bacon, crumbled
  • 1/4 cup Greek yogurt, plain
  • 2 tbsp light mayonnaise
  • 1 tbsp apple cider vinegar
  • 1 tsp honey
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Instructions:

  1. Place the thawed peas in a colander, rinse under cold water for 30 seconds, and pat dry with a paper towel.
  2. In a small bowl, whisk together the Greek yogurt, light mayonnaise, apple cider vinegar, honey, salt, and pepper until smooth.
  3. Combine the dried peas, diced red onion, cheddar cubes, and parsley in a large mixing bowl.
  4. Pour the dressing over the mixture and gently fold with a spatula until every pea is evenly coated.
  5. Fold in the crumbled bacon last to maintain its crunch.
