Ingredients:

  • 1/2 cup (113g) unsalted butter
  • 1 cup (125g) all-purpose flour
  • 1 cup (200g) granulated sugar
  • 1 tbsp (12g) baking powder
  • 1/2 tsp (3g) salt
  • 1 cup (240ml) whole milk
  • 4 cups (600g) sliced fresh peaches
  • 1/4 cup (50g) light brown sugar, packed
  • 1 tsp (2g) ground cinnamon
  • 1 tbsp (15ml) fresh lemon juice
  • 1 tsp (2g) vanilla extract

Instructions:

  1. Preheat oven to 350°F (175°C). Melt the unsalted butter in a 9-inch cast-iron skillet or 2-quart baking dish, either by placing it in the preheating oven or using a microwave, until sizzling.
  2. In a medium bowl, whisk together the all-purpose flour, granulated sugar, baking powder, and salt. Stir in the whole milk and vanilla extract until the batter is smooth.
  3. Carefully pour the batter directly over the melted butter in the skillet. Do not stir; allow the batter to sit as a distinct layer on top of the butter.
  4. In a separate bowl, toss the sliced peaches with light brown sugar, ground cinnamon, and fresh lemon juice until evenly coated.
  5. Spoon the peach mixture over the top of the batter, spreading them evenly to the edges of the pan.
  6. Bake for 40–45 minutes until the edges are bubbling and mahogany-colored and the center of the crust is golden brown and set.
