Ingredients:
- 1/2 cup (113g) unsalted butter
- 1 cup (125g) all-purpose flour
- 1 cup (200g) granulated sugar
- 1 tbsp (12g) baking powder
- 1/2 tsp (3g) salt
- 1 cup (240ml) whole milk
- 4 cups (600g) sliced fresh peaches
- 1/4 cup (50g) light brown sugar, packed
- 1 tsp (2g) ground cinnamon
- 1 tbsp (15ml) fresh lemon juice
- 1 tsp (2g) vanilla extract
Instructions:
- Preheat oven to 350°F (175°C). Melt the unsalted butter in a 9-inch cast-iron skillet or 2-quart baking dish, either by placing it in the preheating oven or using a microwave, until sizzling.
- In a medium bowl, whisk together the all-purpose flour, granulated sugar, baking powder, and salt. Stir in the whole milk and vanilla extract until the batter is smooth.
- Carefully pour the batter directly over the melted butter in the skillet. Do not stir; allow the batter to sit as a distinct layer on top of the butter.
- In a separate bowl, toss the sliced peaches with light brown sugar, ground cinnamon, and fresh lemon juice until evenly coated.
- Spoon the peach mixture over the top of the batter, spreading them evenly to the edges of the pan.
- Bake for 40–45 minutes until the edges are bubbling and mahogany-colored and the center of the crust is golden brown and set.
