- 1 tbsp (12g) brown sugar
- 1/4 tsp (0.5g) ground cinnamon
- 1 tsp (5ml) lemon juice
- 2 tbsp (28g) unsalted butter, melted
- 4 tbsp (32g) all-purpose flour
- 2 tbsp (25g) granulated sugar
- 1/4 tsp (1g) baking powder
- 1 tbsp (15ml) whole milk
- Pinch (0.1g) salt
Instructions:
- Combine the diced peaches, brown sugar, cinnamon, and lemon juice in a small bowl. Stir until the peaches are coated in a syrupy glaze, then transfer the mixture into the bottom of a 12 oz microwave-safe mug, spreading it evenly.
- In the same bowl, combine the melted butter, flour, granulated sugar, baking powder, and salt. Stir in the milk until the batter is smooth and thick, ensuring not to over-mix.
- Spoon the batter carefully over the peaches without stirring the layers. Microwave on high for 1 minute and 30 seconds to 2 minutes, or until the edges are bubbling and the top is set and matte.
