  • 1 tsp (5ml) lemon juice
  • 2 tbsp (28g) unsalted butter, melted
  • 4 tbsp (32g) all-purpose flour
  • 2 tbsp (25g) granulated sugar
  • 1/4 tsp (1g) baking powder
  • 1 tbsp (15ml) whole milk
  • Pinch (0.1g) salt

Instructions:

  1. Combine the diced peaches, brown sugar, cinnamon, and lemon juice in a small bowl. Stir until the peaches are coated in a syrupy glaze, then transfer the mixture into the bottom of a 12 oz microwave-safe mug, spreading it evenly.
  2. In the same bowl, combine the melted butter, flour, granulated sugar, baking powder, and salt. Stir in the milk until the batter is smooth and thick, ensuring not to over-mix.
  3. Spoon the batter carefully over the peaches without stirring the layers. Microwave on high for 1 minute and 30 seconds to 2 minutes, or until the edges are bubbling and the top is set and matte.
