Ingredients:
- 3 large overripe bananas (approx. 1.5 cups mashed)
- 0.5 cup full-fat plain Greek yogurt
- 1 large egg, room temperature
- 2 tsp vanilla extract
- 0.33 cup melted coconut oil or butter
- 1 cup all-purpose flour
- 0.5 cup unsweetened Dutch-process cocoa powder
- 0.75 cup coconut sugar or brown sugar
- 1 tsp baking soda
- 0.5 tsp sea salt
- 0.75 cup 70% dark chocolate chips
Instructions:
- Preheat your oven to 350°F (175°C) and grease your loaf pan or line it with parchment paper.
- In a large mixing bowl, mash the overripe bananas until smooth. Whisk in the melted oil (or butter), egg, Greek yogurt, and vanilla extract until a high-moisture emulsion is formed.
- Sift the cocoa powder, flour, sugar, baking soda, and sea salt into the wet ingredients. Gently fold with a silicone spatula until just combined, being careful not to overmix.
- Fold in the dark chocolate chips.
- Pour the batter into the prepared loaf pan. Bake for 55 minutes, or until a toothpick inserted into the center comes out with just a few moist crumbs.
- Cool in the pan for 15 minutes before using the parchment sling to transfer the loaf to a wire rack to cool completely.
