Ingredients:

  • 3 large overripe bananas (approx. 1.5 cups mashed)
  • 0.5 cup full-fat plain Greek yogurt
  • 1 large egg, room temperature
  • 2 tsp vanilla extract
  • 0.33 cup melted coconut oil or butter
  • 1 cup all-purpose flour
  • 0.5 cup unsweetened Dutch-process cocoa powder
  • 0.75 cup coconut sugar or brown sugar
  • 1 tsp baking soda
  • 0.5 tsp sea salt
  • 0.75 cup 70% dark chocolate chips

Instructions:

  1. Preheat your oven to 350°F (175°C) and grease your loaf pan or line it with parchment paper.
  2. In a large mixing bowl, mash the overripe bananas until smooth. Whisk in the melted oil (or butter), egg, Greek yogurt, and vanilla extract until a high-moisture emulsion is formed.
  3. Sift the cocoa powder, flour, sugar, baking soda, and sea salt into the wet ingredients. Gently fold with a silicone spatula until just combined, being careful not to overmix.
  4. Fold in the dark chocolate chips.
  5. Pour the batter into the prepared loaf pan. Bake for 55 minutes, or until a toothpick inserted into the center comes out with just a few moist crumbs.
  6. Cool in the pan for 15 minutes before using the parchment sling to transfer the loaf to a wire rack to cool completely.
