Ingredients:
- 6 cups fresh peaches, sliced
- 1/2 cup granulated sugar
- 1 tbsp cornstarch
- 1 tsp ground cinnamon
- 1 tbsp lemon juice
- 1 tsp vanilla extract
- 2 cups all-purpose flour
- 1 tbsp baking powder
- 1/2 tsp salt
- 1/2 cup granulated sugar
- 1/2 cup unsalted butter, chilled and cubed
- 1 cup heavy cream or buttermilk
Instructions:
- Preheat the oven to 350°F (175°C).
- In a 9x13 inch baking dish, toss the sliced peaches with 1/2 cup sugar, cornstarch, cinnamon, lemon juice, and vanilla until evenly coated and a light syrup forms.
- In a large mixing bowl, whisk together flour, baking powder, salt, and the remaining 1/2 cup sugar.
- Use a fork or pastry cutter to work the chilled butter cubes into the flour mixture until it resembles coarse crumbs with pea-sized lumps.
- Stir in the heavy cream or buttermilk just until the dough comes together; do not overmix.
- Drop spoonfuls of the dough over the peach mixture, leaving small gaps for the syrup to bubble through.
- Bake for 50–60 minutes until the fruit filling is bubbling around the edges and the topping is a deep, golden mahogany color.
