Ingredients:

  • 6 cups fresh peaches, sliced
  • 1/2 cup granulated sugar
  • 1 tbsp cornstarch
  • 1 tsp ground cinnamon
  • 1 tbsp lemon juice
  • 1 tsp vanilla extract
  • 2 cups all-purpose flour
  • 1 tbsp baking powder
  • 1/2 tsp salt
  • 1/2 cup granulated sugar
  • 1/2 cup unsalted butter, chilled and cubed
  • 1 cup heavy cream or buttermilk

Instructions:

  1. Preheat the oven to 350°F (175°C).
  2. In a 9x13 inch baking dish, toss the sliced peaches with 1/2 cup sugar, cornstarch, cinnamon, lemon juice, and vanilla until evenly coated and a light syrup forms.
  3. In a large mixing bowl, whisk together flour, baking powder, salt, and the remaining 1/2 cup sugar.
  4. Use a fork or pastry cutter to work the chilled butter cubes into the flour mixture until it resembles coarse crumbs with pea-sized lumps.
  5. Stir in the heavy cream or buttermilk just until the dough comes together; do not overmix.
  6. Drop spoonfuls of the dough over the peach mixture, leaving small gaps for the syrup to bubble through.
  7. Bake for 50–60 minutes until the fruit filling is bubbling around the edges and the topping is a deep, golden mahogany color.
