Ingredients:
- 2 cups (250g) all-purpose flour
- 1 tsp (5g) baking powder
- 1/2 tsp (3g) salt
- 3/4 cup (170g) plain Greek yogurt
- 2 tbsp (30ml) warm water
- 1 tbsp (15g) melted butter
- 1 clove (5g) minced garlic
Instructions:
- Whisk together the all-purpose flour, baking powder, and salt in a large mixing bowl.
- Fold in the plain Greek yogurt using a spatula until a shaggy, lumpy dough forms. If the mixture is too dry, add warm water one tablespoon at a time.
- Turn the dough onto a lightly floured surface and gently knead for 2-3 minutes until smooth and elastic, avoiding over-working.
- Divide the dough into 6-8 equal portions and roll them into balls.
- Use a rolling pin to flatten each ball into a circle approximately 1/4 inch (6mm) thick.
- Heat a cast iron skillet or non-stick pan over medium-high heat. Cook each flatbread for 1-2 minutes until bubbles form and the bottom is mahogany-colored, then flip and cook for another 1-2 minutes.
