Ingredients:
- 4 tilapia fillets, approx. 6 oz (170g) each
- 1/2 cup (50g) grated Parmesan cheese
- 1/4 cup (30g) Panko breadcrumbs
- 1 tsp (2g) paprika
- 1 tsp (1g) dried parsley
- 1/2 tsp (3g) garlic powder
- 1/4 tsp (1.5g) salt
- 1/4 tsp (1g) black pepper
- 2 tbsp (30ml) olive oil
Instructions:
- Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper. Use paper towels to press firmly on both sides of the tilapia fillets to remove surface moisture.
- In a shallow dish, whisk together the Parmesan cheese, Panko breadcrumbs, paprika, dried parsley, garlic powder, salt, and black pepper until combined and free of large clumps.
- Brush each fillet lightly with olive oil. Press the fish firmly into the Parmesan mixture, pushing the coating into the flesh on both sides so it adheres.
- Place fillets on the prepared baking sheet and bake for 10–12 minutes until the crust is deep golden brown and the fish flakes easily with a fork.
