Ingredients:

  • 4 tilapia fillets, approx. 6 oz (170g) each
  • 1/2 cup (50g) grated Parmesan cheese
  • 1/4 cup (30g) Panko breadcrumbs
  • 1 tsp (2g) paprika
  • 1 tsp (1g) dried parsley
  • 1/2 tsp (3g) garlic powder
  • 1/4 tsp (1.5g) salt
  • 1/4 tsp (1g) black pepper
  • 2 tbsp (30ml) olive oil

Instructions:

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper. Use paper towels to press firmly on both sides of the tilapia fillets to remove surface moisture.
  2. In a shallow dish, whisk together the Parmesan cheese, Panko breadcrumbs, paprika, dried parsley, garlic powder, salt, and black pepper until combined and free of large clumps.
  3. Brush each fillet lightly with olive oil. Press the fish firmly into the Parmesan mixture, pushing the coating into the flesh on both sides so it adheres.
  4. Place fillets on the prepared baking sheet and bake for 10–12 minutes until the crust is deep golden brown and the fish flakes easily with a fork.
