Ingredients:

  • 1.5 tbsp unsalted butter, softened
  • 1 tbsp freshly grated Parmesan cheese
  • 1/4 tsp garlic powder
  • 1/2 tsp dried oregano
  • 2 slices thick-cut sourdough bread
  • 0.5 cup low-moisture mozzarella cheese, shredded
  • 10 slices thin pepperoni
  • 1 tbsp pizza sauce
  • 3 fresh basil leaves, torn

Instructions:

  1. In a small bowl, combine the softened butter, grated parmesan, garlic powder, and dried oregano. Spread this mixture evenly on one side of each slice of sourdough bread.
  2. Place one slice of bread, butter-side down, in a cold non-stick skillet. Spread a thin layer of pizza sauce on the upward-facing side of the bread.
  3. Layer half of the mozzarella cheese, followed by the pepperoni slices and torn basil. Top with the remaining mozzarella cheese to act as a binder.
  4. Place the second slice of bread on top, butter-side facing up. Turn the heat to medium-low.
  5. Cover the pan with a lid for approximately 3 minutes to ensure the cheese melts thoroughly. Remove the lid and increase heat slightly to medium.
  6. Flip the sandwich carefully once the bottom is mahogany-colored and crispy. Sear the other side for 2-3 minutes until the cheese is fully melted and the exterior is golden brown.
