Ingredients:

  • 16 oz frozen English peas, thawed and dried
  • 4 large hard-boiled eggs, diced
  • 1/3 cup red onion, finely minced
  • 1/2 cup sharp cheddar cheese, cubed small
  • 1/2 cup cooked bacon, crumbled
  • 1/2 cup mayonnaise
  • 1/4 cup sour cream
  • 1 tbsp granulated sugar
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Instructions:

  1. Place thawed peas in a colander, rinse under very cold water, and pat dry with a clean kitchen towel or paper towels.
  2. In a large mixing bowl, combine the dried peas, diced eggs, minced onion, cheddar cheese, and crumbled bacon.
  3. In a separate small bowl, whisk together the mayonnaise, sour cream, sugar, salt, and pepper until the sugar is completely dissolved and the mixture is smooth.
  4. Pour the dressing over the pea mixture and gently fold the ingredients together using a rubber spatula until every pea is coated.
