Ingredients:
- 16 oz frozen English peas, thawed and dried
- 4 large hard-boiled eggs, diced
- 1/3 cup red onion, finely minced
- 1/2 cup sharp cheddar cheese, cubed small
- 1/2 cup cooked bacon, crumbled
- 1/2 cup mayonnaise
- 1/4 cup sour cream
- 1 tbsp granulated sugar
- 1/2 tsp salt
- 1/4 tsp black pepper
Instructions:
- Place thawed peas in a colander, rinse under very cold water, and pat dry with a clean kitchen towel or paper towels.
- In a large mixing bowl, combine the dried peas, diced eggs, minced onion, cheddar cheese, and crumbled bacon.
- In a separate small bowl, whisk together the mayonnaise, sour cream, sugar, salt, and pepper until the sugar is completely dissolved and the mixture is smooth.
- Pour the dressing over the pea mixture and gently fold the ingredients together using a rubber spatula until every pea is coated.
