Ingredients:

  • 6 pieces (approx. 6 inches / 15 cm) pita bread
  • 2 tbsp olive oil
  • 3/4 cup pizza sauce
  • 2 cups shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • 1 tsp dried oregano
  • 4 oz pepperoni slices

Instructions:

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Place pita breads on the baking sheet and lightly brush the tops with olive oil. Bake for 3 minutes to create a moisture barrier.
  3. Remove pitas from the oven. Spoon 2 tbsp of sauce onto each pita, spreading in a thin layer while leaving a 1/4 inch border.
  4. Sprinkle a pinch of Parmesan cheese first, then layer with shredded mozzarella and pepperoni slices.
  5. Return pizzas to the oven and bake for 7-10 minutes until the cheese is bubbling with golden-brown spots and the edges of the pita are deep mahogany-brown.
