Ingredients:
- 2 cups (250g) all-purpose flour
- ¾ cup (180ml) warm water
- 2 tbsp (30ml) olive oil
- ½ tsp (3g) salt
- 1 tsp (3g) instant yeast
- 1 tsp (5g) sugar
Instructions:
- Combine flour, salt, and instant yeast/sugar in a large mixing bowl. Create a well in the center and pour in the warm water and olive oil.
- Stir with a spatula until a shaggy dough forms and no dry flour remains.
- Turn the dough onto a lightly floured surface. Gently press it into a disc and roll it out to approximately 1/4 inch thickness using a rolling pin.
- Divide the dough into two equal circles, ensuring a few air bubbles remain for better charring.
- Heat a non-stick skillet or cast-iron pan over medium-high heat with a drizzle of oil. Lay the dough in the pan and cook for 2-3 minutes per side until golden-brown blistered spots appear.
- Immediately top the seared flatbread with sauce and cheese. Place under a broiler for 2-3 minutes until the cheese is bubbling and edges are mahogany-colored.
