Ingredients:
- 16 oz frozen green peas, thawed and patted dry
- 1/2 cup red onion, finely diced
- 2 tbsp fresh parsley, minced
- 1/2 cup plain Greek yogurt
- 1/4 cup light mayonnaise
- 1 tbsp apple cider vinegar
- 1 tsp honey
- 1/2 tsp garlic powder
- 1/2 tsp salt
- 1/4 tsp black pepper
Instructions:
- Rinse the thawed peas in a colander and pat them thoroughly dry with paper towels.
- Dice the red onion and soak it in a bowl of cold water for 10 minutes, then drain and pat dry.
- In a separate small bowl, whisk together the Greek yogurt, light mayonnaise, apple cider vinegar, honey, garlic powder, salt, and pepper until the mixture is smooth.
- Combine the dried peas, soaked red onions, and minced parsley in a large mixing bowl.
- Pour the dressing over the vegetables and fold gently with a spatula until evenly coated.
- Chill for 30 minutes until the dressing feels set and cold.
