Ingredients:
- 16 oz frozen sweet peas, thawed and drained
- 8 oz sharp cheddar cheese, cubed into 1/4 inch pieces
- 6 slices bacon, cooked crisp and crumbled
- 3 large hard-boiled eggs, chopped
- 1/4 cup red onion, finely diced
- 3/4 cup mayonnaise
- 2 tbsp granulated sugar
- 1 tbsp apple cider vinegar
- 1/2 tsp salt
- 1/4 tsp black pepper
Instructions:
- Ensure frozen peas are completely thawed and patted dry with a paper towel. Cube the sharp cheddar into uniform 1/4 inch pieces.
- In a separate small bowl, whisk together the mayonnaise, sugar, apple cider vinegar, salt, and black pepper until the sugar has dissolved and the dressing is glossy.
- In a large mixing bowl, combine the thawed peas, cubed cheddar, crumbled bacon, chopped eggs, and diced red onion.
- Pour the dressing over the mixture and gently fold with a spatula until all ingredients are evenly coated, taking care not to mash the eggs.
- Chill the salad in the refrigerator for 1 hour before serving to allow flavors to meld.
