Ingredients:

  • 16 oz frozen peas, thawed and drained
  • 8 oz diced ham, cooked
  • 1/4 cup red onion, finely diced
  • 1/2 cup sharp cheddar cheese, cubed or shredded
  • 1/2 cup mayonnaise
  • 1/4 cup sour cream
  • 1 tbsp granulated sugar
  • 1 tbsp apple cider vinegar

Instructions:

  1. Place 450g frozen peas in a colander and rinse with warm water until thawed. Note: Warm water thaws them faster than cold without cooking them.
  2. Pat the peas dry with a paper towel. Wait until they feel tacky, not wet.
  3. In a large mixing bowl, combine the dried peas, 225g diced ham, 60ml finely diced red onion, and 60g cubed sharp cheddar cheese.
  4. In a medium bowl, whisk together 120ml mayonnaise, 60ml sour cream, 15g granulated sugar, and 15ml apple cider vinegar.
  5. Whisk until the sugar has completely dissolved and the mixture is silky.
  6. Pour the dressing over the pea mixture.
  7. Gently fold the ingredients together using a rubber spatula. Do this for about 1 minute until evenly coated.
  8. Transfer to a covered container.
  9. Chill for 30 minutes in the fridge. This lets the flavors meld and the dressing thicken slightly.
  10. Give it one last gentle stir before serving to redistribute the cheese and ham.
