Ingredients:

  • 1/2 cup (120g) diced peaches (fresh or canned)
  • 1 tsp (5ml) lemon juice
  • 1 tbsp (12g) brown sugar
  • 1/4 tsp (1g) ground cinnamon
  • 1/2 tsp (2g) cornstarch
  • 3 tbsp (25g) all-purpose flour
  • 1 tbsp (8g) granulated sugar
  • 1/4 tsp (1g) baking powder
  • 1 tbsp (14g) cold unsalted butter, cubed
  • 1 tbsp (15ml) milk or heavy cream

Instructions:

  1. Toss the diced peaches, lemon juice, brown sugar, cinnamon, and cornstarch directly in a 6 oz oven-safe ramekin. Stir until the peaches are coated in a thick slurry and spread evenly across the bottom.
  2. In a small bowl, whisk together the flour, sugar, and baking powder. Using a fork, cut in the cold butter until the mixture resembles coarse crumbs.
  3. Stir in the milk just until a soft, tacky dough forms, being careful not to overmix.
  4. Spoon the dough over the peaches, pressing it down slightly but leaving a few craggy peaks for texture.
  5. Bake at 375°F (190°C) in an oven or air fryer for 12–15 minutes until the top is golden-brown and the fruit is bubbling.
