Ingredients:

  • 1.5 lb 80/20 ground beef
  • 1/2 cup panko or plain breadcrumbs
  • 1 large egg, beaten
  • 1/2 packet beef onion soup mix
  • 1 tsp garlic powder
  • 1/2 tsp black pepper
  • 2 tbsp vegetable oil
  • 8 oz sliced baby bella mushrooms
  • 2 cups beef broth, low sodium
  • 1 tbsp Worcestershire sauce
  • 1 tsp onion powder
  • 2 tbsp cornstarch
  • 3 tbsp cold water

Instructions:

  1. In a mixing bowl, combine the ground beef, breadcrumbs, beaten egg, beef onion soup mix, garlic powder, and black pepper. Mix gently by hand to avoid overworking the meat.
  2. Shape the mixture into 4 oval patties, each approximately 1 inch thick.
  3. Heat vegetable oil in a skillet over medium-high heat. Sear each patty for 3-4 minutes per side until a deep brown crust forms.
  4. Place the seared patties in the bottom of a slow cooker.
  5. Scatter the sliced baby bella mushrooms around and on top of the patties.
  6. Pour the beef broth and Worcestershire sauce into the slow cooker, ensuring the tops of the patties remain slightly above the liquid.
  7. Cover and cook on Low for 7-8 hours or High for 4 hours.
  8. In a small bowl, whisk together the cornstarch and cold water to create a smooth slurry.
  9. Stir the slurry into the slow cooker liquid.
  10. Cover and cook on High for an additional 15-30 minutes until the gravy is thick and glossy.
