Ingredients:

  • 1 lb raw shrimp, peeled and deveined
  • 1 tbsp avocado oil
  • 2 tbsp low-sodium Cajun seasoning
  • 8 oz full-fat cream cheese, softened
  • 1/2 cup full-fat sour cream
  • 2 tbsp dry ranch dressing mix
  • 1 tbsp Louisiana-style hot sauce
  • 1/2 cup green onions, finely sliced

Instructions:

  1. Preheat your smoker or grill to 225°F (107°C).
  2. Toss the shrimp in avocado oil and Cajun seasoning in a bowl until every piece is evenly coated.
  3. Spread the seasoned shrimp in a single layer on a cast iron skillet or perforated grill tray.
  4. Place in the smoker and cook for 10 minutes until the shrimp are opaque and have developed a mahogany-colored char.
  5. Remove shrimp from heat, allow to cool slightly, and finely chop to increase surface area for the dip.
  6. In a large mixing bowl, use a hand mixer to combine softened cream cheese, sour cream, ranch seasoning, and hot sauce until smooth.
  7. Fold in the chopped smoked shrimp and the sliced green onions (whites and greens).
  8. Serve immediately while shrimp are warm or refrigerate for at least 30 minutes to allow flavors to meld.
