Ingredients:
- 1 lb raw shrimp, peeled and deveined
- 1 tbsp avocado oil
- 2 tbsp low-sodium Cajun seasoning
- 8 oz full-fat cream cheese, softened
- 1/2 cup full-fat sour cream
- 2 tbsp dry ranch dressing mix
- 1 tbsp Louisiana-style hot sauce
- 1/2 cup green onions, finely sliced
Instructions:
- Preheat your smoker or grill to 225°F (107°C).
- Toss the shrimp in avocado oil and Cajun seasoning in a bowl until every piece is evenly coated.
- Spread the seasoned shrimp in a single layer on a cast iron skillet or perforated grill tray.
- Place in the smoker and cook for 10 minutes until the shrimp are opaque and have developed a mahogany-colored char.
- Remove shrimp from heat, allow to cool slightly, and finely chop to increase surface area for the dip.
- In a large mixing bowl, use a hand mixer to combine softened cream cheese, sour cream, ranch seasoning, and hot sauce until smooth.
- Fold in the chopped smoked shrimp and the sliced green onions (whites and greens).
- Serve immediately while shrimp are warm or refrigerate for at least 30 minutes to allow flavors to meld.
