  • 1 tsp vanilla extract
  • 1 tbsp melted butter

Instructions:

  1. In a large bowl, combine the thawed frozen peaches with granulated sugar, cornstarch, cinnamon, nutmeg, ginger, and lemon juice.
  2. Let the mixture sit for 10 minutes to allow the fruit to release its juices and integrate with the spices.
  3. Grease a 9x9 inch baking dish or cast-iron skillet with melted butter and pour in the peach mixture, spreading it evenly.
  4. In a medium bowl, whisk together the flour, sugar, baking powder, and salt.
  5. Use a pastry cutter or fork to cut the chilled, cubed butter into the flour mixture until it resembles coarse crumbs with pea-sized lumps.
  6. Stir in the milk and vanilla extract until just combined; do not overmix.
  7. Spoon the batter over the peaches in rustic dollops or spread evenly.
  8. Bake for 40 minutes or until the crust is golden brown and the peach filling is bubbling.
