Instructions:
- In a large bowl, combine the thawed frozen peaches with granulated sugar, cornstarch, cinnamon, nutmeg, ginger, and lemon juice.
- Let the mixture sit for 10 minutes to allow the fruit to release its juices and integrate with the spices.
- Grease a 9x9 inch baking dish or cast-iron skillet with melted butter and pour in the peach mixture, spreading it evenly.
- In a medium bowl, whisk together the flour, sugar, baking powder, and salt.
- Use a pastry cutter or fork to cut the chilled, cubed butter into the flour mixture until it resembles coarse crumbs with pea-sized lumps.
- Stir in the milk and vanilla extract until just combined; do not overmix.
- Spoon the batter over the peaches in rustic dollops or spread evenly.
- Bake for 40 minutes or until the crust is golden brown and the peach filling is bubbling.
