Ingredients:
- 1 lb (450g) frozen sweet green peas
- 1/2 cup (15g) fresh mint leaves, chiffonade
- 1/4 cup (15g) fresh flat-leaf parsley, chopped
- 1/2 cup (75g) red onion, finely diced
- 1/2 cup (60g) radishes, thinly sliced into half-moons
- 4 oz (115g) sharp cheddar cheese, cubed small (optional)
- 4 oz (115g) cooked bacon, crumbled (optional)
- 1/2 cup (120g) plain Greek yogurt
- 1/4 cup (60g) mayonnaise
- 1 tbsp (15ml) apple cider vinegar
- 1 tsp (5ml) fresh lemon juice
- 1/2 tsp (3g) kosher salt
- 1/4 tsp (1g) cracked black pepper
- 1/2 tsp (2g) granulated sugar
Instructions:
- Bring a large pot of salted water to a rolling boil.
- Drop in the frozen peas and boil for exactly 2 minutes.
- Immediately drain the peas through a colander and plunge them into an ice bath.
- Let the peas chill for 5 minutes, then drain thoroughly and pat dry with a paper towel.
- In a small bowl, whisk together the Greek yogurt, mayonnaise, apple cider vinegar, lemon juice, sugar, salt, and pepper until smooth.
- In a large mixing bowl, combine the chilled peas, diced red onion, and sliced radishes.
- Pour the dressing over the vegetables and fold gently using a spatula until evenly coated.
- Fold in the fresh mint, parsley, and optional cheese or bacon.
- Serve immediately or refrigerate for 30 minutes to let the flavors meld.
