Ingredients:

  • 2 large (1 lb / 450g) English cucumbers, thinly sliced into rounds
  • 1/2 cup (75g) red onion, thinly sliced into half-moons
  • 1/4 cup (10g) fresh cilantro, roughly chopped
  • 2 tbsp (15g) roasted peanuts, crushed
  • 3 tbsp (45ml) rice vinegar
  • 2 tbsp (30ml) water
  • 1 tbsp (15ml) fish sauce
  • 1 tbsp (12g) granulated sugar
  • 1 tsp (5ml) toasted sesame oil
  • 1/2 tsp (1g) red pepper flakes
  • 1 tsp (3g) toasted sesame seeds
  • 1 stalk (5g) green onion, thinly sliced

Instructions:

  1. Slice the English cucumbers into thin, uniform rounds and slice the red onion into paper-thin half-moons.
  2. Combine the rice vinegar, water, fish sauce, sugar, sesame oil, and red pepper flakes in a small bowl and whisk until the sugar is completely dissolved.
  3. Toss the sliced cucumbers and red onions into a large mixing bowl, pour the dressing over the vegetables, and toss gently to coat.
  4. Fold in the chopped cilantro and crushed peanuts, then sprinkle with toasted sesame seeds and green onions immediately before serving.
