Ingredients:
- 2 large (1 lb / 450g) English cucumbers, thinly sliced into rounds
- 1/2 cup (75g) red onion, thinly sliced into half-moons
- 1/4 cup (10g) fresh cilantro, roughly chopped
- 2 tbsp (15g) roasted peanuts, crushed
- 3 tbsp (45ml) rice vinegar
- 2 tbsp (30ml) water
- 1 tbsp (15ml) fish sauce
- 1 tbsp (12g) granulated sugar
- 1 tsp (5ml) toasted sesame oil
- 1/2 tsp (1g) red pepper flakes
- 1 tsp (3g) toasted sesame seeds
- 1 stalk (5g) green onion, thinly sliced
Instructions:
- Slice the English cucumbers into thin, uniform rounds and slice the red onion into paper-thin half-moons.
- Combine the rice vinegar, water, fish sauce, sugar, sesame oil, and red pepper flakes in a small bowl and whisk until the sugar is completely dissolved.
- Toss the sliced cucumbers and red onions into a large mixing bowl, pour the dressing over the vegetables, and toss gently to coat.
- Fold in the chopped cilantro and crushed peanuts, then sprinkle with toasted sesame seeds and green onions immediately before serving.
