Ingredients:

  • 1 large English cucumber, diced (300g)
  • 3 medium Roma tomatoes, seeded and diced (350g)
  • 1/2 small red onion, thinly sliced (50g)
  • 1/4 cup fresh parsley, chopped (15g)
  • 1/2 tsp kosher salt (3g)
  • 3 tbsp extra virgin olive oil (45ml)
  • 2 tbsp red wine vinegar (30ml)
  • 1 clove garlic, minced (5g)
  • 1/2 tsp dried oregano (1g)
  • 1/4 tsp black pepper (1.5g)
  • 1/4 tsp sea salt (1.5g)

Instructions:

  1. Place diced cucumbers in a colander and sprinkle with 1/2 tsp kosher salt. Toss gently and let sit for 10–15 minutes.
  2. Rinse the salted cucumbers quickly with cold water and pat dry with a paper towel to remove excess moisture.
  3. In a small jar or bowl, combine olive oil, red wine vinegar, minced garlic, dried oregano, pepper, and sea salt. Shake or whisk until emulsified and cohesive.
  4. In a large mixing bowl, combine the pre-treated cucumbers, seeded tomatoes, and sliced red onion.
  5. Pour the dressing over the vegetables and toss gently with a spoon until every piece is lightly coated.
  6. Fold in the fresh parsley just before serving.
