Ingredients:

  • 3 (10 oz / 280g) bags frozen English peas, thawed and drained
  • 3 large hard-boiled eggs, diced
  • 4 slices (60g) cooked bacon, crumbled
  • ½ cup (50g) red onion, finely minced
  • ½ cup (50g) sharp cheddar cheese, cubed small
  • ½ cup (115g) mayonnaise
  • ¼ cup (60g) sour cream
  • 1 tbsp (15ml) lemon juice or apple cider vinegar
  • 1 tbsp (12g) granulated sugar
  • ½ tsp (3g) salt
  • ¼ tsp (1g) black pepper

Instructions:

  1. Drain the thawed English peas into a colander and pat them dry with a paper towel to remove excess moisture.
  2. In a large mixing bowl, combine the dried peas, diced hard-boiled eggs, crumbled bacon, minced red onion, and cubed cheese.
  3. In a separate small bowl, whisk together the mayonnaise, sour cream, lemon juice, sugar, salt, and pepper until the sugar has dissolved and the mixture is smooth and glossy.
  4. Pour the dressing over the pea mixture.
  5. Using a rubber spatula, gently fold the ingredients together until the peas are evenly coated, taking care not to mash the eggs.
