Ingredients:

  • 1 lb ground turkey sausage (lean)
  • 2 cups frozen diced hash brown potatoes
  • 1 tbsp olive oil
  • 1/2 tsp garlic powder
  • 1/2 tsp smoked paprika
  • 10 large eggs
  • 1/4 cup whole milk
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 8 large (10-inch) flour tortillas
  • 2 cups shredded sharp cheddar cheese

Instructions:

  1. Heat olive oil in a large non-stick skillet over medium-high heat. Add the frozen potatoes and cook 8-10 minutes until the edges are golden brown and crisp.
  2. Add the ground turkey sausage to the same skillet, breaking it up with a spatula. Stir in the garlic powder and smoked paprika. Cook until the turkey is browned and no pink remains (check for an internal temperature of 160°F).
  3. Transfer the turkey and potato mix to a bowl and let it cool completely to room temperature to prevent sogginess.
  4. Lower the skillet heat to medium. In a bowl, whisk together the eggs, milk, salt, and pepper. Pour the mixture into the skillet, gently pushing the eggs to create large curds. Remove from heat while they still look slightly wet.
  5. Microwave each tortilla for 10 seconds to make them pliable.
  6. Place a layer of shredded cheese in the center of each tortilla. Add a scoop of the cooled turkey potato mix, then top with the scrambled eggs. Fold the sides in and roll tightly from the bottom up.
