Ingredients:

  • 4 cups (600g) frozen sweet peas, thawed
  • 1/2 cup (75g) red onion, finely diced
  • 3/4 cup (100g) celery, thinly sliced
  • 1/2 cup (120ml) vegan mayonnaise
  • 1 tbsp (15ml) lemon juice, freshly squeezed
  • 1 tsp (5ml) maple syrup
  • 1/2 tsp (2.5g) garlic powder
  • 1/4 tsp (1.5g) salt
  • 1/4 tsp (1.5g) cracked black pepper
  • 2 tbsp (8g) fresh dill, chopped
  • 2 tbsp (8g) fresh parsley, chopped

Instructions:

  1. Bring a medium pot of salted water to a rolling boil.
  2. Drop in the thawed peas for exactly 60 seconds.
  3. Immediately drain the peas into a colander and plunge them into an ice bath to stop the cooking process.
  4. Once chilled, pat the peas dry with a paper towel.
  5. In a small bowl, combine the vegan mayonnaise, lemon juice, maple syrup, garlic powder, salt, and pepper; whisk until smooth.
  6. Place the chilled peas, diced red onion, and sliced celery into a large mixing bowl.
  7. Pour the dressing over the vegetables and gently fold together using a spatula until evenly coated.
  8. Fold in the fresh dill and parsley.
  9. Transfer to the fridge and chill for at least one hour before serving.
