Ingredients:
- 16 oz frozen sweet peas, thawed
- 1 cup sharp cheddar cheese, diced into small cubes
- 1/2 cup red onion, finely diced
- 1/2 cup celery, thinly sliced
- 1/4 cup fresh parsley, chopped
- 1/2 cup mayonnaise
- 1 tbsp fresh lemon juice
- 1 tsp Dijon mustard
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 tsp honey
Instructions:
- Bring a pot of salted water to a rolling boil. Drop in the thawed peas for exactly 60 seconds. Immediately drain them in a colander and run cold water over them until they are chilled. Pat them dry with a paper towel.
- In a small bowl, whisk together the mayonnaise, lemon juice, Dijon mustard, salt, pepper, and honey until the mixture is velvety and uniform.
- Combine the dried peas, diced cheddar, red onion, and celery in a large mixing bowl. Pour the dressing over the top and gently fold with a spatula until every pea is coated. Stir in the fresh parsley last.
- Cover the bowl and refrigerate for at least 1 hour to allow flavors to meld.
