Ingredients:

  • 16 oz frozen sweet peas, thawed
  • 1 cup sharp cheddar cheese, diced into small cubes
  • 1/2 cup red onion, finely diced
  • 1/2 cup celery, thinly sliced
  • 1/4 cup fresh parsley, chopped
  • 1/2 cup mayonnaise
  • 1 tbsp fresh lemon juice
  • 1 tsp Dijon mustard
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 tsp honey

Instructions:

  1. Bring a pot of salted water to a rolling boil. Drop in the thawed peas for exactly 60 seconds. Immediately drain them in a colander and run cold water over them until they are chilled. Pat them dry with a paper towel.
  2. In a small bowl, whisk together the mayonnaise, lemon juice, Dijon mustard, salt, pepper, and honey until the mixture is velvety and uniform.
  3. Combine the dried peas, diced cheddar, red onion, and celery in a large mixing bowl. Pour the dressing over the top and gently fold with a spatula until every pea is coated. Stir in the fresh parsley last.
  4. Cover the bowl and refrigerate for at least 1 hour to allow flavors to meld.
